How to I change my setting to automatically go to the most recent Sent Item?
My Inbox still goes to the last e-mail received, but other folders default
to the oldest.

You really should not store emails either in the Inbox
or the Sent Items folder. Create new folders for
long term storage.
Once you create a folder, you can choose any column
you want from the list of columns or if it is just a matter
of sorting, click the column you want to display ascending
or desending order. Works the same as any window in
Windows.
